This past week we had my parents come over for dinner. They are currently re-doing their kitchen which means the people that work at the burger joint down the street practically know them by name. A home cooked meal at their house is out of the question so we decided to have them over for dinner so that they could have a change from Philly cheese steaks, hot dogs and meatball parmesan sandwiches.
Now, let me ask you a question. Who in their right mind does not like wine? That’s right, nobody. So when I find a recipe that includes wine I typically jump on it. Today’s recipe includes one of my favorite wines for cooking, Pinot Grigio. I enjoy cooking with this type of wine because it’s not too sweet or too dry. So let’s get started with a recipe for Pinot Grigio Chicken with Honey Citrus Glaze.
This chicken was super easy, super quick, and super delicious. So basically, it was super :) I prepared the marinade a few hours ahead of time so that the chicken had time to soak in all the deliciousness. The marinade is pretty simple. Add the juice of one orange, 1 cup of Pinot Grigio, 4 cloves of minced garlic, and ¼ cup of honey to a bowl and mix until fully incorporated. Cut the chicken so that it is in smaller pieces, instead of large chicken breasts.
Add the chicken and marinade to a large plastic bag and place in the refrigerator for at least 2 hours. The longer you let it sit the better!
Once the chicken has finished marinating, place it on the grill set to about 350 degrees Fahrenheit. We cooked the chicken on the outside grill but you could also cook inside on a grill pan if you prefer. Cook the chicken for about 6 minutes on each side. While the chicken is cooking, you can prepare the glaze. Combine 2/3 cup Pinot Grigio, 1/3 cup honey, the juice of one orange and the juice of one lime in a sauce pan. Bring to a boil and then simmer for about 10 minutes.
Once the chicken is done, simply add the glaze on top and serve! We decided to serve with corn on the cob, salad and bruschetta. We grilled the bread for the bruschetta on the grill which I would highly recommend! I’m not sure what my parents enjoyed more, spending time with us or finally having a home cooked meal. I’m guessing it was the meal… just kidding :)
