Had a tough week and looking for an easy recipe? Then you’ll love today’s recipe for Oven Baked Chicken Fajita over Brown Basmati Rice. Typically we would make a meal like this using regular brown rice or farro however I wanted to try something new. Let me tell you, I’ve fallen in love with basmati rice. It’s like regular brown rice except thinner and longer. You can make this meal over any rice your heart desires but if you’d like to try something different, I would definitely suggest basmati rice.
Preheat your oven to 400 degrees Fahrenheit. Then, start to prepare your chicken and vegetables. For this meal we used the typical chicken fajita vegetables: red bell pepper, green bell pepper, and onion. You could even add more vegetables like mushrooms if you’d like but if you want to keep it simple, you can’t go with simple peppers and onion. Slice the vegetables about ¼ inch thick and cut the chicken into long thin slices. The smaller you cut your vegetables, the less time it will take to cook in the oven.
Place the vegetables into a 9 x 13 inch baking pan and mix together. Then add the chicken strips.
Next you will gather your spices together. You could probably buy a pre-made type of fajita seasoning but I bet you have all these ingredients in your cabinet to make it yourself! That way you will use less sodium and have fewer preservatives. Mix all your spices together in a small bowl. Add all the spices and extra virgin olive oil to the baking pan and mix until fully incorporated. Bake in the oven for about 40 minutes. Make sure to stir once half way done so that the juices get mixed throughout.
While your chicken and vegetables are cooking in the oven, you can make the brown basmati rice. All you need to do is follow the stovetop directions on the back of the package. For each cup of brown rice you will need 2 ½ cups of water. Add the water and rice to a small saucepan and bring to a boil. Once boiling, bring down to low heat and simmer for approximately 20 minutes.
Once you take the chicken and vegetables out of the oven, you can squeeze the juice of one lime throughout the pan and mix together.
To serve, place a scoop of brown basmati rice onto the center of a dish and then top with the chicken/vegetable mixture.
